Marinated Mackerel Toast with Piquillo Peppers and Cheese

This recipe features marinated mackerel served on toasted bread with caramelized onions, piquillo peppers, and manchego cheese.



Ingredients

  • 4 mackerel fillets
  • 4 slices of country bread
  • 1 onion
  • kilogram of salt
  • kilogram of sugar
  • 4 piquillo peppers
  • 100 grams of aged manchego cheese
  • olive oil
  • vinegar
  • paprika
Steps

Marinate the mackerel:


Mix salt, sugar, and paprika to taste. Spread a layer of this mixture in a container, place two fillets skin-side down on top, cover with another layer of the mixture, place the other two fillets skin-side up, and cover with the remaining mixture. Cover with plastic wrap and refrigerate for 24 hours.


Slice and caramelize the onion:


Slice the marinated mackerel into thin slices. Saut the sliced onion in julienne cuts until caramelized, season with salt, and add the sliced piquillo peppers. Cook for 2 minutes and set aside.


Toast the bread:


Toast the slices of bread, layer with the caramelized onion and peppers, sprinkle with grated cheese, and bake until melted. Once out of the oven, add the mackerel slices on top and serve.
