A delicious rice dish with a mix of vegetables and savory ham
- 4 cups of rice
- 75 grams of serrano ham
- 250 grams of lean pork
- 6 artichokes
- 2 carrots
- 100 grams of frozen peas
- 1 tomato
- 1 onion
- 2 cloves of garlic
- 1 sprig of parsley
- olive oil

- black pepper
Peel and chop the onion. Scrape the carrots and clean the artichokes; wash both. Cut the onion into cubes and quarter the artichokes. Also wash the tomato, cut it in half, and grate it.
Cut the ham into thin strips. Wash the parsley, dry it, and chop it finely. Crush it in a mortar with a pinch of salt and 1 peeled garlic clove. Clean the lean pork, wash it, and dry it. Cut it into pieces and saut it for 5 minutes in a pot with 4 tablespoons of oil. Season with salt and pepper and remove it from the pot.
Saut the onion in the same oil for 8 minutes. Add the remaining peeled and chopped garlic, the carrots, and the artichokes, and continue cooking for about 2 minutes.
Add the tomato, season with salt and pepper, and cook for 10 minutes over very low heat. Add the lean pork, ham, rice, peas, and the crushed mixture, and saut for 3 minutes, stirring constantly. Cover with hot water, season to taste, and cook for 16 minutes; the rice should be creamy. Let it rest for a few moments and serve.
