Vegetable Minestrone Soup with Red Beans

A delicious and hearty soup made with a variety of vegetables and red beans. This soup is packed with flavors and perfect for a comforting meal.



Ingredients

  • 2 spring onions
  • 2 cloves of garlic
  • 5 potatoes
  • 200 grams of green beans
  • 3 carrots
  • 100 grams of noodles
  • 200 grams of red beans
  • olive oil
  • salt
  • black pepper
  • grated cheese
Steps

Chop the garlic and spring onions.


Peel and dice the potatoes. Trim and chop the green beans. Peel, wash and dice the carrots.


Saut the spring onions in a pot with 3 tablespoons of olive oil until transparent. Add the garlic and cook for 2 minutes. Then add the rest of the vegetables, saut for 1 more minute and season with salt and black pepper.


Cover the ingredients with water or broth and simmer for 20 minutes on low heat, making sure the potatoes don't break apart.


Add the noodles and red beans to the pot, rinsed and drained, when there are 10 minutes left of cooking time. Remove from heat when the time is up and adjust the seasoning if necessary.


Let the soup cool slightly and serve with grated cheese on the side.
