Bean and Thyme Pasta Stew

A delicious and hearty stew made with red beans, pasta, and flavored with thyme. Perfect for a comforting meal.



Ingredients

  • 100 grams of red beans
  • 50 grams of bacon sliced into strips
  • 2 carrots
  • 2 onions
  • 1 stick of celery
  • 1 sprig of parsley
  • 100 grams of pasta shells
  • 1 garlic clove
  • 3 tablespoons of olive oil
  • thyme
  • pepper
  • salt
Steps

1. Cook the beans


Soak the beans for 12 hours. Drain them, put them in a pot with plenty of cold water, and bring to a boil. Once it boils, 'scare' them by adding a little cold water. Repeat this operation 2 times and cook for 2 hours.


2. Chop the vegetables


Wash the celery, remove the strings and chop it. Peel and chop the garlic and onions. Scrape the carrots, wash them, and cut them into small cubes. Clean the bacon and cut it into strips. Wash, dry, and chop the parsley.


3. Fry the bacon


Heat the oil in a pot and saut the onion until translucent. Add the garlic and bacon, and saut for another 3 minutes.


4. Add the pasta


Season with salt and pepper, and add the celery, carrot, and thyme. Cover with water, bring to a boil, and simmer for 15 minutes. Add the drained pasta and beans, and continue to cook for another 10 minutes. Serve the stew in bowls, hot, and sprinkle with parsley.
