Marinate the tuna: Mix 5 tablespoons of coarse salt with 5 tablespoons of sugar and cover the tuna. Let it marinate in the refrigerator for 30 minutes. Rinse, dry, and cut into cubes.
Cook the potatoes and eggs: Wash the potatoes and cook them with their skins for 35 minutes in a pot of salted water. Let them cool, peel them, and cut them into cubes. Cook the eggs for 10 minutes. Rinse them with cold water, peel them, and cut them into wedges.
Chop the vegetables: Wash the tomatoes and cut them in the same way. Clean the green beans, wash them, and chop them. Cook them in salted water for 8 minutes and drain them. Peel and chop the onion.
Mix the ingredients: Mix the potatoes with the eggs, green beans, onion, and tomato. Season with olive oil, vinegar, salt, and pepper. Add the tuna and olives. Sprinkle with chopped chives and serve.
