- 500 grams of minced pork
- 400 grams of tomato sauce
- 250 grams of aged goat cheese
- 2 onions
- 2 garlic cloves
- 1 tablespoon of chopped parsley
- 2 egg yolks
- 4 tablespoons of breadcrumbs
- 1 cup of flour
- dried oregano
- 4 tablespoons of olive oil
- 200 milliliters of olive oil for frying
- salt
- pepper
Saut the onions
Peel and julienne the onions. Saut them in a pan with 4 tablespoons of olive oil until caramelized. Remove and drain.
Mix the minced meat
Place the minced pork in a large bowl and add the egg yolks, chopped parsley, minced garlic, caramelized onions, and a pinch of salt and pepper. Mix well with your hands, add the breadcrumbs, and mix again.
Shape the meatballs
Form small meatballs, cut the cheese into cubes, and stuff one cube into each meatball. Reshape them into round balls and coat them with flour.
Fry in batches
Place the meatballs in a pan and fry them in olive oil, in batches, until golden brown. Let them drain on paper towels and set aside.
Mix with tomato sauce
Pour the tomato sauce into a large saucepan, add the meatballs and a little oregano, and heat for a few minutes over low heat. Serve hot.
