Yellow rice with chicken and vegetables

This recipe will teach you how to make flavorful yellow rice with tender chicken and vegetables. With a combination of spices and ingredients, this dish is both delicious and satisfying.



Ingredients

  • 320 grams of rice
  • 1 tomato
  • 350 grams of diced chicken
  • 100 grams of green beans
  • 50 grams of cooked chickpeas
  • 1 garlic clove
  • 1 onion
  • 900 milliliters of beef broth
  • 1 small glass of white wine
  • saffron

Steps

Prepare the ingredients by washing the chicken, peeling and chopping the onion, washing and cutting the green beans, and grating the tomato.


In a large pot, heat 3 tablespoons of olive oil and brown the chicken pieces on all sides. Season with salt and pepper.


Remove the chicken from the pot and set aside. In the same pot, saut the onion for 5 minutes. Add the green beans and garlic, and cook for an additional minute. Then, add the grated tomato and white wine. Increase the heat and let the wine reduce. Season with salt and continue cooking for another 5 minutes.


Add the chicken, chickpeas, saffron, and rice to the pot. Stir for 1 minute, then pour in the hot beef broth. Cook on high heat for 5 minutes, then reduce the heat and simmer for an additional 12 minutes.
