A delicious recipe for stuffed avocados filled with marinated salmon and a salad mix of vegetables and fruits.
- 4 avocados
- 250 grams of salmon
- 1 red onion
- 2 celery stalks
- 4 baby cucumbers
- 1 lemon
- 1 lime
- 75 grams of red currants
- 200 grams of papaya
- bag of lamb's lettuce
- ball of arugula
- vinegar

- pepper
1. Marinate the salmon: Wash and dry the salmon. Cut it into pieces, sear them on a grill pan with a little bit of oil, and set aside.
2. Chop the vegetables: Clean the celery stalks, peel the onion, and finely chop everything. Wash the baby cucumbers, slice a few rounds for decoration, and dice the rest. Peel the papaya, remove the seeds, and cut it into cubes.
3. Prepare the avocados: Cut the avocados in half, remove the pit, and gently scoop out the flesh without breaking it. Drizzle with lemon juice.
4. Fill the avocados: Cut the salmon into small cubes and fill the avocados with them, along with the diced vegetables. Decorate with cucumber slices.
5. Make the dressing: Prepare a dressing by mixing 35 ml of oil, a pinch of salt, a pinch of pepper, 10 ml of vinegar, and the lime juice.
6. Arrange the salad: Put the lamb's lettuce and arugula in a bowl and mix them with the red currants and papaya. Serve this salad as a bed for the stuffed avocados and drizzle everything with the dressing.
